A treasure of a find on Martha Stewart, which of course I've altered a bit:
2 C whole wheat flour (I sift mine, but I'm not entirely sure it's necessary)
1/4 C packed brown sugar
1/4 C ground flaxseed
1 T baking powder
1 t salt
1 t (heaping) ground cinnamon
2 C old-fashioned rolls oats
2 1/4 C milk (I typically use nonfat)
2 large eggs
1/4 vegetable oil
In a food processor, combine flour, sugar, flax, baking powder, salt, cinnamon, and 1 cup of oats and pulse a few times to mix. In a separate bowl, whisk together the milk, eggs, and oil. Then add dry ingredients and remaining 1 cup oats and whisk until moistened.
Cook according to your waffle maker settings.
I've found I'm adding ground flaxseed meal to just about all of my baking recipes. The amount of fiber, antioxidants, and Omega-3 fatty acids in flax is amazing. Plus, it has a nice nutty flavor that our family really likes.
These are a big hit with our house on weekend mornings...if we're not making our walk to our favorite hangout, "Baker Mike's" for a biscuit or sticky bun!
