First off, I have to thank my mommy friend Janel for this recipe. It is yummy, yummy, yummy! Oh, and did I mention super healthy too??!!
4 ears of corn
1 T cilantro*
1 T fresh lime juice
1 T olive oil
1/4 t salt
1/2 t pepper
Heat BBQ to medium/high heat. Grill 4 shucked ears of corn, rotating often until lightly charred...or about 15 minutes.
Let corn cool slightly. Cut kernels from cob.
Toss kernels with 1 avocado (cut into small chunks), cilantro, lime juice, olive oil, salt, and pepper.
*I'll come out and say it. This girl is NOT a huge fan of cilantro. But, it's somehow a nice flavor with this salad. Our Safeway doesn't often have fresh cilantro so I usually get the freeze-dried stuff in a jar.
