Cinnamon Graham Crackers

My good friend Bethany is a fantastic cook!  A couple years back she shared her family's recipe for homemade graham crackers and they are to die for.  Of course I had to add more cinnamon...Timmy's favorite spice!  This recipe makes a TON of them so make sure you have an airtight container to store them.  I probably whip up a batch of these healthy little treats once every couple months.
Ingredients:
DRY:
3.5 C whole wheat flour
2 C white flour
1/2 t salt
1 t baking powder
1 T cinnamon
WET:
1 C butter
1 1/3 C sugar
1 T molasses
1 C water
1 t vanilla
Mix dries.  Cream butter & sugar in a mixer.  Add molasses & vanilla, cream again.  Add water.  Combine with dries.  Mix until dough no longer sticks to edge of bowl.  Let sit for 30 minutes.  Roll out and score into cracker sized bites.  Bake at 325 for approx. 20 - 22 minutes, depending on your oven.
Make sure you roll the dough pretty darn thin or else they will bake more like a cake and not a crunchy cracker...something I learned the hard way on my first attempt.  On a side note, these crackers make a heavenly s'mores when going camping!
