Cindy, one of my Mom's best friends, and a "2nd Mommy" to yours truly, brought a double batch of these heavenly (and HUGE) cookies to our annual 4th of July cabin trip a couple years back. I kid you not, they were gone within hours. Loaded with chunky peanut butter, oats, and chocolate. Enough said.
1/2 C butter
1 1/2 C sugar
1 1/2 C brown sugar
1 t vanilla
2 C chunky peanut butter (I've tried with creamy and they just don't turn out as good)
6 C oats
6 oz. chocolate chips
2 1/2 t baking soda
Preheat oven to 350.
Cream butter and sugar. Blend in eggs, vanilla, peanut butter, and baking soda. Mix well. Gently stir in oats and chocolate chips.
Drop 1/4 C dough for each cookie onto ungreased baking sheet. Space 2-3" apart, about 6-8 per sheet. I like mine thick and chunky so I don't flatten them with a fork or anything.
Bake for 10-15 minutes. I'm a chewy cookie kid myself so I typically bake closer to 10 minutes. Let stand for 3 minutes before transferring to a cooling rack.
