Getting the Voss kids to eat meat is challenging at times. But WOW do they both love this "sticky chicken" as Timmy calls it. How can you go wrong though, when the main ingredients are ketchup and garlic? Word to the wise, use the boneless, skinless thighs, not breasts. I'm no chicken expert but I do know this much, the breast meat gets dry really easy. Pour the remaining sauce over rice and vegetables (we typically do broccoli and asparagus) and you're set!
6 boneless skinless chicken thighs (we've also used wings, drum sticks, etc.)
2/3 C ketchup
2/3 C honey
1/3 C soy sauce
4 cloves of garlic
1 t Tabasco sauce
Preheat oven to 350 degrees. Place chicken in a baking dish (I use an 8x8 Pyrex). Mix remaining ingredients in a small saucepan. Bring to a boil, then reduce heat and let sit for 5 minutes. Pour mixture over chicken and bake for 35 - 40 minutes. Doesn't get any easier than that!
